Pierre Lesterle and Marco Raponi, young chefs from the big kitchens, launch their restaurant By PM restaurant in 2017

Both have mastered gourmet cuisine and now want to unleash their creativity.

This restaurant, Pierre and Marco conceive it as a culinary workshop where we come to have fun and share their happiness to cook. They want to remain sensitive to the exchanges, in the image of their map that they shape in a dynamic, evolutionary way … influenced by the seasons.

Inspired by the Mediterranean culture, their gourmet and vegetal cuisine is based on a deep, delicate and sensitive work of simple and natural products above all. That’s why they chose to collaborate with local artisanal producers and suppliers.

With this commitment, they design their business by combining tradition, inventiveness, know-how with current issues.

Like François Vatel, Pierre and Marco like to see culinary art as a plural discipline, a philosophy of life. They will be chefs, restaurateurs, creators, knowers (or adventurers) and Masters of Festivals.

L’Aparté Restaurant

A word about L’Aparté restaurant:

To make you happy and to wake up your taste buds, have a look at l’Aparté in Villefranche-sur-Mer. Hidden in the narrow streets of the old town you will be surprised by an innovative cuisine, colorful and full of flavors. A real treat in a warm and friendly atmosphere.

Aparté offers a fusion of cuisine, tasty and creative. In the program of this beautiful address: bar fillet and its parsley morel juice, plancha of fish, duck breast with sugared almonds and maple syrup, veal chop and dried tomatoes accompanied by roasted pine nuts and risotto thyme juice, spring rolls Reblochon, back of cod in dried fruit crust and its exotic coulis … Tasty and original cuisine, just cooking, hearty dishes and a very pleasant atmosphere.

What a great time.

One of Villefranche’s most acclaimed restaurants is a step back in time, as it’s sited on rue Obscure, a medieval street that dates back to the year 1260. Conversely, cuisine is breathtakingly modern. Flambéed duck breast is served with a courgette frappe, herb-crusted rack of lamb with pea purée. Top service combine with fair prices to produce a memorable meal.

Elsa Restaurant

Anyone who still believes that luxury and organic are incompatible, find here a denial of weight. Nestled in the Monte Carlo Roquebrune Beach Hotel, an upscale resort in the 1930s revived by the designer India Mahdavi, Elsa is a concentrate of Riviera. White terrace overlooking the Mediterranean, graphic and clear room with azure walls, everything is in place. This attractive table, awarded in the “culinary creativity” category at the 2014 Organic Place Awards, is also the first restaurant in France to be able to boast of being both 100% organic certified and the bearer of a Michelin star *. This award, made in February 2014, is a victory for chef Paolo Sari, who has been involved for three years in a cuisine of excellence that respects nature.

Flowers and plants mingle To serve this demanding gastronomy, Paolo Sari worked in the hinterland of Monaco in search of local gardeners able to deliver exquisite vegetables and fruits without pesticides, picked at the peak of their taste quality. Free for the chef to reveal and marry their raw flavors, an art refined in the four corners of the world. The menus vary over the weeks, depending on what these producers harvest. That’s why one of Elsa’s flagship dishes, a vegetal and floral entry called “Bio Sama”, is never really the same. The sabayon of red fruits either, which celebrates spring strawberries, raspberries or cherries during the summer, etc.

An air of Italy When he does not pick in his immediate surroundings, Paolo Sari relies on the best soils: salt of Guérande and extra virgin olive oil from the hinterland of Nice, herbes de Provence and black truffle from Périgord, mountain beans and green citrus from the coast … Of course, Paolo Sari does not deny his native country, Italy, which is only a few kilometers from Monaco. Sanremo prawns, old parmesan artichokes, spaghetti, capelleti, gnocchi and risotto, Pantelleria capers and iced cappuccino are all on the menu.

A resort in organic clothes Sunday, brunch day, the chef exposes the arrivals of the day, rough. The guests choose what whets their appetite and the maestro cooks them especially. A privilege that requires, as for other meals, to book well in advance. Especially since the honors of Michelin have placed Elsa in the spotlight, the number of seats is limited (30 indoor, 30 on the terrace), and the stoves only run between March and October. If you want to extend your stay, know that the resort that houses it, owned by the Society of Sea Baths (held 70% by the Monegasque government), has converted its three catering points to 100% organic . Until the mini-bar in the rooms! A rarity that deserves a detour …

La Pinede has been an institution on the French Riviera for many years. Ideally located by the Mediterranean sea, this former fisherman’s shack in Cap d’Ail has become a pleasant restaurant where fish lovers gather.Fishes come directly from Corsica and are served poached or grilled, on the beautiful terraces, by the water.
La Pinede is open every day (expect on wednesdays) from march to october, for lunch and dinner.

La Passagère Hotel Belles Rives

Tucked away on Cap d’Antibes in the quaint town of Juan les Pins, Hôtel Belles Rives’ restaurant pays homage to its location with a focus on local seafood.

Designer Olivier Antoine, known for his work at Thermes Marins Monte-Carlo, redesigned the space to include contemporary pieces that speak to the restaurant’s sophisticated, imaginative and airy setting while conserving its Art Deco roots.

A Carrara white marble floor with a vibrant mosaic center ushers guests into the main entrance. Magnificent chandeliers illuminate the room filled with art from the 1930’s and hand-painted Bernardaud porcelain plates, featuring scenes from the hotel’s surroundings.

Colorful hand-blown glass created by artisans from the nearby city of Biot enhance the warmth of the space, while ceramic rosettes and oversized mirror panels hang from the ceiling, allowing bright colors to ricochet and reflect throughout.

Additional design features include a mix of green and blue fabric benches, custom Ruhlmann chairs covered with celadon leather, tall white pillars with intricate hand-painted designs and oversized windows.

Aurélien Véquaud is the Chef of the Michelin starred restaurant La Passagère.
Before joining the Hotel Belles Rives, he used to be Executive Sous-Chef at La Vague d’Or in Saint Tropez (Residence de La Pinède – 3 Michelin Stars, Chef Arnaud Donckele) first and, secondly, Executive Sous-Chef at La Réserve De Beaulieu in Beaulieu-sur-Mer (1 Michelin Star, Chef Yannick Franques, Meilleur Ouvrier de France). Aurélien is proud of his position and looks forward to present his culinary creations, where he likes to honor the finest Mediterranean products.

The restaurant’s dessert menu will still include a sugar blown dish called the “pearl in blown sugar shell,” the signature dessert from Pastry Chef Steve Moracchini, who was awarded the 2016 Pastry Chef of the Year from Gault & Millau.
